The best £3 burger you'll ever have

Last week, we went around to a friends house to sample a "proper burger" A meat connoisseur, he talked about the meat-cut percentages required in the perfect patty, mentioned people like Zan Kaufman, Joe Grossman and Tom Reany (the who's who in burgerdom), and went to events like Burgerbash. Needless to say, we were wide eyed and super keen having had the curtain peeled back to see a world i'd never seen before.

I had previously ranted that i had not found a good burger in London but i have just had by burger cherry deliciously popped. i immediately wanted to recreate the experience with a few additions/amendments:

• Less blue cheese - i think the meat should be given some space to shine. blue cheese has a tendency to overpower • A slice of tomato - the little bit of acidity cuts through the umami and gives a richer dimension • Sides! - Every bite of this burger is a taste-ha-bomb. I like solos but isn't nice to have supporting acts? It makes me appreciate the burger even more.

I enlisted A as a condiment consultant and after much deliberation we settled on lightened classics: Slaw, Wallies & Grilled Asparagus. Did i mention the boys went with a Paleo friendly version using Portobellos instead of the brioche? They later conceded that it somehow diluted their burger experience because of the moistness of the mushrooms but that's another challenge for later. The burger showcase at 10quid for 4 patties and 4 demo-brioche bun is fantastic value, cheaper than mcdonalds (waaay cheaper if you factor in the cost of putting crap in your body) crazy! It was no-nonsense when i asked if i could have the JO patties instead of the varying weekly special. I had popped out when the delivery came Saturday morning, i called Tony who put the box in the bushes at my request.
