EASY-AS CARROT DIP

I love alot of things Turkish. The food, the culture, my husband....  Some dishes are the very expression of love and commitment, taking days to prepare whilst others are so simple that making it feels like you've cheated.  Alas, no adultery here, just some good old fashioned food from scratch.

  • 4 medium carrots, grated - i like dips to be chunky, you might want yours to be a bit finer.

  • 5 cloves of garlic - less if you're planning to kiss anyone

  • A generous glug-glug of olive oil

  • Plain yoghurt - use Greek yoghurt for its creamier texture

  • Sumac*


* Sumac comes from the berries of a wild bush that grows wild in all Mediterranean areas, it is a common ingredient in Arabic and Mediterranean cooking, used for sourness and astringency instead of lemons or vinegar

Step 1.  Put the olive oil in a pan on low to medium heat.

Step 2. Add the garlic and carrots.   The aim is to soften the carrots and garlic - do not let them go brown

Step 3.  When the carrots get a bit mushy and change colour, turn off the stove and leave to cool

Once you've made this, it's like having cracked a code.  This is the formula to make all sorts of dip.  Beetroot is really good and i think a carrot and ginger concoction would be magic.
